This salty-sweet trio showcases three varieties of crunchy, bite-sized, caramelized-nut Dragées — each the result of precision technique, craft, and pursuit of fine ingredients.
Nicholas and our Confections team spent months exploring nuts for this collection. After tasting blanched almonds, roasted almonds, and almonds grown as far away as Iran, they selected California grown Braga Organic Farms almonds for their balanced flavor and ideal size and texture. While studying dragée technique in northern Italy, Nicholas met with a chocolatier at Guido Castagna in Torino, which led to his selection of Piedmont hazelnuts, prized for their intense flavor and sweetness. Among the macadamia nuts sampled, the clear winner were the buttery macadamias from Zorzal Comunitario, Dominican Republic — the same region where our Zorzal cocoa beans are produced.
