Chocolate Dragée Macadamias

These bite-sized, caramelized-nut Dragées showcase macadamia nuts sourced from Zorzal Comunitario, Dominican Republic — the same region where our Zorzal cocoa beans are grown. While our Confections team also taste-tested macadamias from Hawaii, Tanzania, and Rwanda, these were their clear favorite given the nuts’ buttery flavor. When roasted, they’re reminiscent of buttery pancakes, which is why Nicholas chose to caramelize them in maple sugar from Vermont’s Barred Woods Maple Sugar, along with a hint of fleur de sel. We enrobe them in our brightly fruity 70% Zorzal chocolate before dusting them with Zorzal cocoa powder for a satisfying, salty-sweet bite.
