Our Tokyo Gâteaux are made in limited batches by our Japan team and flown in fresh, so they arrive exactly as intended — delicate, deeply chocolatey, and true to their origins. This fudgy, subtly tangy dessert is crafted with just four ingredients: single-origin chocolate, organic cane sugar, Japanese eggs — with deep orange yolks — and unsalted, cultured Hokkaido butter. With so few components, each element matters.

We’ve tried to recreate this cake in our San Francisco kitchen, using the same formula and method, but it never quite matches what’s made in Japan. The difference comes down to precision technique and the ingredients themselves, which give it its distinct texture and flavor. This flourless French-style Gâteaux is unlike anything we’ve had before.

Served chilled, it has a texture similar to soft cheese. At room temperature, the chocolate flavor intensifies. When gently warmed in the oven, it turns light and airy.

Each Gâteau serves seven to ten people.
