Every fall and spring, Nicholas and our Confections team hand-craft three signature Timbales, filled with local-harvest ingredients — their way of exploring new flavor experiences, and sharing confectionery creativity with you. For our debut fall Timbale Collection, Nicholas and team aim to evoke warm memories of autumn pies savored during years past. Each fragrant filling of caramelized nuts or farm-fresh fruit is complemented by a buttery, feuilletine-crisped almond praliné “crust,” all encased in a delicate disc of our mellow 70% House Blend chocolate.

Our 2025 Fall Collection includes three Timbales:

Apple Pie Timbale

Silky caramel of organic local apples, complemented by a buttery praliné “crust”

Pecan Pie Timbale

Salty-sweet maple-sugar butter caramel, accented with lightly toasted pecans

Pumpkin Pie Timbale

Velvety caramel of puréed pumpkin, finished with a flak
